Cuisine with Chords #1 X The Berlin Fusion


As a self chosen Berliner, one thing I love about my city is the fusion of cultures. Whether it's music, arts or cuisine; Berlin has a lot to offer and embraces anything that elevates that lifestyle. From what I have seen in the past years, the two biggest trends are American Burgers and Middle Eastern Falafel. I've been to the USA as well as to Dubai before and understand why this is such a hit in peoples taste buds. Fusing the two, turned out delicious. So turn on the music and enjoy the journey of Cuisine with Chords.





Chilli Garlic Salsa

  • 2 Tomatos
  • 1 red onion
  • 2 Garlic cloves
  • 1/2 Scotch Bonet
  • 1 Handful parsley


  • 1 Avocado
  • 1 red onion
  • 1 fresh Lime ( juice)
  • Salt & Pepper

Seasame Sauce

  • tahini past
  • lukewarm water
  • 3 cloves raw garlic
  • 1 fresh lemon (juice )
  • salt & pepper

Beetroot fries

  • 1 Beetroot
  • 4 Sweet Potatos or 10 slim baby carrots
  • Thyme
  • Olive oil

Falafel Burger

  • Spelt Burger Bun

Falafel Burger Patty

  • 250 g tin chickpeas
  • 3 Garlic cloves
  • 1 Handful parsley
  • 1Handful fresh coriander
  • 1Chilli
  • 2 Tbs Flour
  • 1 Tsp baking powder
  • 1 Tsp Ground cumin
  • 1 Ts Coriander ground in a mortar
  • Ginger
  • 1 Tbs Salt & Pepper

Date reduCtion

  • 2 red onions
  • 5 dates
  • brown sugar
  • balsamic vinegar


1. Falafel Burger Patty

Put all ingredients in a blender or put them in a large bowl and use a hand held blender. The Mass should be humid yet not a wet dough consistency. If too dry add a little olive oil and chickpea water.

2. Date reduction

Chop dates finely in little cubes. Slice onions finely. Fry them in little olive oil. Add brown sugar and let is caramelize. Add Balsamic and keep stirring until it is reduced to a thick sauce.

3. Chilli Garlic Salsa

Put all ingredients in a blender or chop then VERY finely. Mix in a bowl.

4. Guacamole

Mash Avocado with a fork, chop onions very Finley, add lime juice, salt and pepper

5. Sesame sauce

Mix one spoon of tahini paste with lime juice and garlic in a blender. Add water till it is a sauce consistency. Add salt and pepper.

6. Beetroot fries

Cut Sweet Potatoes (or carrots) in half and cook with the beetroot in the boiling water. They will get the colour if the beetroot. Rinse. Cut sweet potatoes into thick fries, code with olive oil and put in oven until crispy. Chop Thyme finely and sprinkle over the fries.
